Pasta

Chicken, Pepperoni and Bow-Tie Pasta

What you need:

2 tablespoons olive oil
1/2 teaspoon red pepper flakes
1/2 green pepper, cut into 2 inch strips or large cubes
1/2 red pepper, cut into 2 inch strips or large cubes
1 large clove of garlic, minced
3/4 cup cooked pepperoni (spread out on paper towels and microwave 30 seconds, rotate and microwave 30 more seconds)
1 1/2 cups cooked chicken, shredded or cubed
1/2 lb. bow tie pasta or pasta of your choice
2 cups of marinara sauce
Parmesan cheese, optional

What you do:
In a large skillet, heat olive oil and add red pepper flakes, green pepper and red pepper. Cook just until they become slightly tender. Add garlic and cook on low about 3 more minutes. Add cooked pepperoni and cooked chicken and reduce heat to very low.

Meanwhile fill a large sauce pan 2/3 full of water, bring to a boil, add 1 teaspoon or so of salt and cook pasta according to package directions. Once cooked, drain the pasta and add to the skillet. Pour marinara sauce into skillet and heat until all of the ingredients are heated through and serve immediately.
